French Fries without Frying
If french fries are your favorite food but you hate the fat from frying, try oven frying 'em! Cut potatoes into matchsticks or crinkle cut (leave skin on for more fiber). Toss in bowl with a few tablespoons of canola or safflower oil and fresh pressed garlic. Bake at 45o until crisp and golden. (A baking stone is great for this, but not absolutely necessary.)
